Refreshing and strongly aromatic, this well-known herb is very versatile. Its leaves, stems, seed, and root are used in cuisines around the world. Cilantro microgreens have the same flavor as full-size leaves, but are more tender.
The complexity of Cilantro's flavor really shines through when uncooked or when added toward the end of cooking. Use both the stems and leaves, as the stems of your indoor-grown Cilantro will be exceptionally tender. The roots of Cilantro are traditionally used in Thai dishes. If you are using the roots, make sure to rinse them before using.
Cilantro is a good source of Thiamin and Zinc, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Riboflavin, Niacin, Vitamin B6, Folate, Pantothenic Acid, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese.
