Arugula, also known as rocket, has a strong peppery flavor that adds zip to many dishes. Fresh-harvested arugula has a pleasant nutty aftertaste that typically subsides within 24 hours of harvesting.
Used fresh or lightly cooked, arugula is extremely versatile and adds spice and flavor to any dish. It can add character to salads of lettuces and spinach, or it can be eaten in a salad on its own, dressed with a lemony vinaigrette. It makes a more interesting topping for sandwiches than lettuces, and is the perfect complement to morning eggs.
Arugula is a good source of Protein, Thiamin, Riboflavin, Vitamin B6, Pantothenic Acid, Zinc and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium and Manganese.
