These microgreens are faster-growing, more tender, and more nutrient-dense than their mature greens. Much like mustard seed, the greens of this plant have a peppery kick with a bitter bite. If you desire a less bitter mustard with the same spicy flavor, you can try our purple mustard microgreens. This variety, Garnet Giant, has a beautiful deep purple color. They are a popular component of southern cooking, as well as Indian, Japanese, Chinese, and African cuisines.
Mustard greens are often prepared with a combination of heat, salt, and fat to subdue their bitter flavor. If the bitterness doesn't bother you, mustard greens make a great spicy addition to a salad. Mustard greens are great on sandwiches, lending a similar flavor to mustard seed, but with a fresh crunch.
